Ingredients

  • 2 cups broccoli florets
  • ¼ cup raw sunflower seeds
  • 2 cups fresh baby spinach
  • 1 tbsp extra virgin olive oil
  • 2 tbsp tahini
  • 1 tbsp fresh lemon juice
  • Pinch of sea salt

Method

  1. 1Preheat your oven to 200°C and line a baking tray.
  2. 2Toss the broccoli florets with olive oil and a pinch of salt, then spread on the tray.
  3. 3Roast for 15 minutes until the edges are slightly golden.
  4. 4Scatter the sunflower seeds over the tray and roast for a further 5 minutes.
  5. 5Place fresh spinach in serving bowls and top with the warm roasted mixture.
  6. 6Whisk the tahini and lemon juice with a small splash of water until smooth, then drizzle over the bowl.
