Ingredients

  • 1 cup cooked brown rice

  • ½ cup shelled edamame

  • 1 tsp sesame seeds
  • 1 spring onion, sliced
  • 1 tsp tamari (gluten-free soy sauce)

Method

  1. 1Warm the brown rice gently in a pan or microwave.
  2. 2Warm the edamame briefly in a small pan with a splash of water.
  3. 3Divide the rice between two bowls.
  4. 4Top each bowl with kimchi, edamame, and spring onion.
  5. 5Drizzle with sesame oil and tamari.
  6. 6Scatter sesame seeds over the top and serve immediately.
  7. 7Add the kimchi at the end — do not heat it to preserve the live cultures.
