Ingredients

  • ½ cup cooked quinoa or brown rice
  • 2 large handfuls fresh spinach
  • ¼ cup toasted walnut halves
  • 1 tbsp extra virgin olive oil
  • 1 tsp lemon zest
  • 1 tbsp crumbled feta (optional)

Method

  1. 1Warm the pre-cooked grains gently in a pan or microwave.
  2. 2Place the fresh spinach in a bowl and spoon the warm grains on top — the heat will lightly wilt the leaves.
  3. 3Roughly chop the toasted walnuts and scatter over the bowl.
  4. 4Drizzle with olive oil and sprinkle with lemon zest for brightness.
