Ingredients

  • 1 cup cooked brown rice
  • 400g can black beans, drained and rinsed

  • ½ tsp ground cumin
  • Juice of 1 lime
  • 1 tbsp olive oil
  • Fresh coriander and sliced avocado, to serve

Method

  1. 1Warm the olive oil in a pan over medium heat. Add the black beans, sweet corn, and cumin.
